Delicious strawberry custard bars with a buttery crust, perfect for dessert.


Ingredients

  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, diced
  • Powdered sugar for dusting

Instructions

  1. Prepare the Baking Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving enough overhang on the sides for easy removal later.
  2. Make the Crust: In a medium bowl, combine the flour, sugar, and salt. Pour in the melted butter and stir until a soft dough forms. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes, or until lightly golden around the edges.
  3. Prepare the Custard Filling: While the crust bakes, whisk together the eggs, sugar, sour cream, flour, and vanilla extract until smooth and creamy.
  4. Add the Strawberries: Spread the diced strawberries evenly over the warm crust. Slowly pour the custard mixture on top, making sure the berries are evenly covered.
  5. Bake the Strawberry Custard Bars: Return the pan to the oven and bake for 35–40 minutes, or until the custard is set and the center no longer jiggles excessively.
  6. Cool and Slice: Allow the bars to cool completely before refrigerating for at least 2 hours. Dust with powdered sugar before serving if desired.
