- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, diced
- Powdered sugar for dusting
Instructions
- Prepare the Baking Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving enough overhang on the sides for easy removal later.
- Make the Crust: In a medium bowl, combine the flour, sugar, and salt. Pour in the melted butter and stir until a soft dough forms. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes, or until lightly golden around the edges.
- Prepare the Custard Filling: While the crust bakes, whisk together the eggs, sugar, sour cream, flour, and vanilla extract until smooth and creamy.
- Add the Strawberries: Spread the diced strawberries evenly over the warm crust. Slowly pour the custard mixture on top, making sure the berries are evenly covered.
- Bake the Strawberry Custard Bars: Return the pan to the oven and bake for 35–40 minutes, or until the custard is set and the center no longer jiggles excessively.
- Cool and Slice: Allow the bars to cool completely before refrigerating for at least 2 hours. Dust with powdered sugar before serving if desired.
