Description

This delicious baked dish combines smoky sausage with colorful vegetables for a hearty meal.


Ingredients

  • 2 cups diced sweet potatoes (about 2 medium)
  • 1½ cups green beans (trimmed and halved)
  • 2 bell peppers (sliced (any color))
  • 12 oz smoked sausage (sliced into ½-inch pieces)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • 2 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Dice 2 cups sweet potatoes (about 2 medium) into ¼-inch cubes. Trim and halve 1½ cups green beans and slice 2 bell peppers.
  3. Spread the sweet potatoes, green beans, and bell peppers evenly on the baking sheet.
  4. Add 12 oz smoked sausage (sliced into ½-inch pieces) on top of the vegetables.
  5. In a small bowl, mix 1 tsp paprika, 1 tsp garlic powder, 2 tsp Italian seasoning, 2 tsp salt, and 1 tsp black pepper.
  6. Sprinkle the seasoning mixture evenly over everything on the pan.
  7. Bake for 30–40 minutes, stirring halfway through, until the sweet potatoes are tender and the vegetables are lightly charred.
  8. Serve warm and enjoy!
