- 2 cups diced sweet potatoes (about 2 medium)
- 1½ cups green beans (trimmed and halved)
- 2 bell peppers (sliced (any color))
- 12 oz smoked sausage (sliced into ½-inch pieces)
- 1 tsp paprika
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- 2 tsp salt
- 1 tsp black pepper
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Dice 2 cups sweet potatoes (about 2 medium) into ¼-inch cubes. Trim and halve 1½ cups green beans and slice 2 bell peppers.
- Spread the sweet potatoes, green beans, and bell peppers evenly on the baking sheet.
- Add 12 oz smoked sausage (sliced into ½-inch pieces) on top of the vegetables.
- In a small bowl, mix 1 tsp paprika, 1 tsp garlic powder, 2 tsp Italian seasoning, 2 tsp salt, and 1 tsp black pepper.
- Sprinkle the seasoning mixture evenly over everything on the pan.
- Bake for 30–40 minutes, stirring halfway through, until the sweet potatoes are tender and the vegetables are lightly charred.
- Serve warm and enjoy!
