A delicious vegan recipe featuring crispy tofu, gnocchi, and sun-dried tomatoes.
Ingredients

- 14 oz Firm Tofu
- 2 cups Gnocchi
- 1 cup Sun-Dried Tomatoes, chopped
- 1 cup Coconut Cream or Cashew Cream
- 2 tablespoons Nutritional Yeast
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- Salt and Pepper to taste
- Fresh Basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Pat the tofu cubes dry and add them to the skillet; cook until golden brown, about 8-10 minutes. Remove and set aside.
- Sauté the minced garlic in the same skillet for 1 minute until fragrant.
- Add the chopped sun-dried tomatoes and cook for 2 minutes.
- Mix in the coconut cream and nutritional yeast, whisking until combined. Season with salt and pepper.
- Stir in the cooked gnocchi and crispy tofu, cooking for an additional 3-4 minutes until heated through.
- Serve warm, garnished with fresh basil.
Notes
- This dish can be served as a main course or a side dish.
- For added protein, consider adding another source of plant-based protein.
