Description

A delicious vegan recipe featuring crispy tofu, gnocchi, and sun-dried tomatoes.


Ingredients

Scale
  • 14 oz Firm Tofu
  • 2 cups Gnocchi
  • 1 cup Sun-Dried Tomatoes, chopped
  • 1 cup Coconut Cream or Cashew Cream
  • 2 tablespoons Nutritional Yeast
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Salt and Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Pat the tofu cubes dry and add them to the skillet; cook until golden brown, about 8-10 minutes. Remove and set aside.
  3. Sauté the minced garlic in the same skillet for 1 minute until fragrant.
  4. Add the chopped sun-dried tomatoes and cook for 2 minutes.
  5. Mix in the coconut cream and nutritional yeast, whisking until combined. Season with salt and pepper.
  6. Stir in the cooked gnocchi and crispy tofu, cooking for an additional 3-4 minutes until heated through.
  7. Serve warm, garnished with fresh basil.

  • This dish can be served as a main course or a side dish.
  • For added protein, consider adding another source of plant-based protein.
