Delicious and healthy egg bites packed with spinach and bell peppers.
Ingredients

- 8 large eggs
- 1/2 cup low-fat cottage cheese (drained)
- 1/2 teaspoon salt
- 1/2 cup chopped spinach
- 1/2 cup chopped red bell peppers
- 2 Tablespoons salsa
Instructions
- Preheat the oven to 350 degrees F.
- Add the eggs, cottage cheese, and salt to the blender and blend until smooth.
- Fold in the chopped spinach, bell peppers, and salsa.
- Spray the silicone molds with avocado oil spray.
- Pour the egg mixture into muffin pan.
- Bake the egg bites for 30 minutes, or until firm and set.
- Allow to cool for 2 minutes and remove them from the mold.
- Serve and enjoy!
