Description

Delicious and healthy egg bites packed with spinach and bell peppers.


Ingredients

Scale
  • 8 large eggs
  • 1/2 cup low-fat cottage cheese (drained)
  • 1/2 teaspoon salt
  • 1/2 cup chopped spinach
  • 1/2 cup chopped red bell peppers
  • 2 Tablespoons salsa

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Add the eggs, cottage cheese, and salt to the blender and blend until smooth.
  3. Fold in the chopped spinach, bell peppers, and salsa.
  4. Spray the silicone molds with avocado oil spray.
  5. Pour the egg mixture into muffin pan.
  6. Bake the egg bites for 30 minutes, or until firm and set.
  7. Allow to cool for 2 minutes and remove them from the mold.
  8. Serve and enjoy!
