Description

A fresh and healthy chicken salad with a tangy dressing.


Ingredients

  • 2 cups cooked chicken breast, shredded

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey (Optional for sweetness)
  • 1 teaspoon Dijon mustard

Instructions

  1. In a large mixing bowl, combine the shredded chicken, mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
