Description
Delicious and fluffy blueberry bagels made with Greek yogurt and flour for a quick and easy breakfast treat.

- 2 cups plain Greek yogurt
- 2 cups self-rising flour
- 1 cup frozen wild blueberries
- 1 egg – optional for egg wash
- 1 cup gluten free measure for measure flour
- 1 tablespoon baking powder
- 1 cup frozen wild blueberries
Instructions
- Preheat the air fryer to 350°F.
- Add the Greek yogurt and flour to a medium size mixing bowl and mix well to combine into a chunky bagel dough. Then fold in the blueberries.
- Turn the blueberry bagel dough onto a well floured surface and use your hands to knead it for 1-2 minutes until smooth and no longer sticky. If the dough is too sticky to knead than add a little bit more flour.
- Press the dough into a disc shape and divide it into 4 equal sections. Roll each section of dough into a 6 inch log then connect the ends and press them together to form the bagels.
- Crack the egg into a small bowl and whisk it with a splash of water or milk. Brush some egg wash over the top and sides of each bagel.
- Place the bagels into the air fryer basket making sure they are not touching. I used an air fryer liner but you can also just spray the basket with non-aerosol cooking spray to prevent sticking.
- Cook the bagels at 350°F until golden and cooked through about 18-20 minutes.
- Once the bagels are done, remove them from the air fryer and allow them to cool for 5-10 minutes before you slice and serve them.
Notes
- Feel free to add more blueberries for a fruitier taste!
- If using gluten-free flour, ensure it’s a good quality brand for best results.
