Ingredients

  • 1 inch ginger, peeled and thinly sliced

  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground white pepper
  • 1 package (about 2025) vegetable potstickers, fresh or frozen
  • 2 cups chopped bok choy
  • 1/2 cup sliced green onions
  • Optional: Sriracha or chili garlic sauce, for serving

Instructions

  1. In a large pot, combine the chicken broth, ginger slices, minced garlic, soy sauce, sesame oil, and white pepper.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to a simmer and add the vegetable potstickers. If using frozen potstickers, cook according to package directions (usually about 5-7 minutes).
  4. Add the chopped bok choy to the soup during the last 2 minutes of cooking time, allowing it to wilt slightly.
  5. Remove from heat and ladle the soup into bowls.
  6. Garnish with sliced green onions.
  7. Serve immediately with sriracha or chili garlic sauce, if desired.

Notes

  • For a spicier version, add more sriracha or chili garlic sauce.
  • Frozen potstickers are just as delicious as fresh ones.
