Description

This flavorful lemon garlic jasmine rice is perfect as a side dish or base for your meals.


Ingredients

Scale
  • 1 cup jasmine rice
  • 2 cups water
  • 1 Tbsp extra virgin olive oil
  • ½ tsp garlic powder (or 2 cloves garlic, grated or finely minced)
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 Tbsp lemon juice (about half a large lemon)
  • 1 tsp lemon zest (zest of about half a large lemon)
  • ½ cup fresh parsley, chopped

Instructions

  1. Rinse the rice under cool water in a fine mesh strainer to get rid of some of the excess starch.
  2. Then add the rinsed rice, water, extra-virgin olive oil, garlic powder, kosher salt, and black pepper to a saucepan.
  3. Give it a stir and bring to a boil over medium-high heat.
  4. Once boiling, give it another stir, reduce heat to low, and cover with a tight-fitting lid.
  5. Let simmer for 15 minutes or according to the timing on the package.
  6. Remove the rice from the heat and let it sit at least 10 minutes with the lid on.
  7. Then fluff the rice with a fork and add the parsley, lemon zest, and lemon juice.
  8. Mix it to combine and add more salt as needed.

Notes

  • For added flavor, consider using homemade broth instead of water.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
