Cilantro Lime Rice

Description

A flavorful side dish made with jasmine rice, cilantro, and lime.


Ingredients

Scale
  • 1 cup jasmine rice, uncooked
  • 2 cups water
  • 1 Tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ cup cilantro, chopped
  • 1 lime, juice of (about 2 Tbsp lime juice)
  • 1 tsp lime zest, optional

Instructions

  1. Rinse the rice under cool water in a fine mesh strainer to get rid of some of the excess starch.
  2. Then add the rinsed rice, water, extra-virgin olive oil, garlic powder, kosher salt, and black pepper to a saucepan.
  3. Give it a stir and bring to a boil over medium-high heat.
  4. Once boiling, give it another stir, reduce heat to low, and cover with a tight-fitting lid.
  5. Let simmer for 15 minutes or according to the timing on the package.
  6. Remove the rice from the heat and let it sit at least 10 minutes with the lid on.
  7. Then fluff the rice with a fork and add the lime juice, cilantro, and lime zest if using.
  8. Mix it to combine and add more salt as needed.

Notes

  • This rice pairs well with Mexican dishes and complements grilled meats.
  • For a spicier kick, add chopped jalapeños or a dash of cayenne pepper.
