Description

A simple and delicious recipe for roasted asparagus with lime and chili flavor.


Ingredients

  • 1 bunch asparagus (about 20 spears, washed and trimmed)
  • 12 tablespoons olive oil
  • 1 teaspoon chili powder
  • juice from 1 lime
  • ¼ teaspoon salt
  • zest from 1 lime

Instructions

  1. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. Trim the woody ends of the asparagus. If the spears are thick, you can lightly peel the lower part of the stems (optional).
  3. Place the asparagus on the baking sheet. Drizzle with olive oil, lime juice, chili powder, and salt. Toss until evenly coated.
  4. Spread the asparagus in a single layer and roast for 15–20 minutes, depending on thickness, until tender with lightly crisp edges.
  5. Transfer to a serving platter and sprinkle with fresh lime zest before serving.
