- 1 bunch asparagus (about 20 spears, washed and trimmed)
- 1 – 2 tablespoons olive oil
- 1 teaspoon chili powder
- juice from 1 lime
- ¼ teaspoon salt
- zest from 1 lime
Instructions
- Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
- Trim the woody ends of the asparagus. If the spears are thick, you can lightly peel the lower part of the stems (optional).
- Place the asparagus on the baking sheet. Drizzle with olive oil, lime juice, chili powder, and salt. Toss until evenly coated.
- Spread the asparagus in a single layer and roast for 15–20 minutes, depending on thickness, until tender with lightly crisp edges.
- Transfer to a serving platter and sprinkle with fresh lime zest before serving.
Notes
- For enhanced flavor, consider adding garlic or parmesan cheese.
