Description

A sweet treat made from watermelon rind, perfect for snacking or adding to desserts.


Ingredients

  • 4 cups watermelon rind (peeled and cut into strips)
  • 2 cups sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 teaspoon salt

Instructions

  1. Remove the green skin from the watermelon rind and cut it into 1-inch strips.
  2. Soak the rind strips in salted water for 24 hours, changing the water occasionally.
  3. In a pot, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
  4. Add the soaked watermelon rind, vanilla extract, and lemon juice to the pot.
  5. Reduce heat and simmer for about 1-2 hours until the rind becomes translucent and tender.
  6. Use a candy thermometer to ensure the syrup reaches 230°F (110°C).
  7. Remove the rind from the pot and place it on a baking sheet lined with parchment paper.
  8. Allow the rind to dry for 12-24 hours at room temperature until it is no longer sticky.

Notes

  • Ensure the watermelon rind is completely peeled before cutting.
  • Changing the soaking water helps reduce saltiness.
