- 4 cups watermelon rind (peeled and cut into strips)
- 2 cups sugar
- 1 cup water
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 teaspoon salt
Instructions
- Remove the green skin from the watermelon rind and cut it into 1-inch strips.
- Soak the rind strips in salted water for 24 hours, changing the water occasionally.
- In a pot, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
- Add the soaked watermelon rind, vanilla extract, and lemon juice to the pot.
- Reduce heat and simmer for about 1-2 hours until the rind becomes translucent and tender.
- Use a candy thermometer to ensure the syrup reaches 230°F (110°C).
- Remove the rind from the pot and place it on a baking sheet lined with parchment paper.
- Allow the rind to dry for 12-24 hours at room temperature until it is no longer sticky.
Notes
- Ensure the watermelon rind is completely peeled before cutting.
- Changing the soaking water helps reduce saltiness.
