Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 2 cups fresh apricots (pitted and chopped)
- 1 tablespoon honey (optional for sweetness)
Instructions
- In a blender, combine the chopped apricots and honey. Blend until smooth.
- In a mixing bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, and lemon juice until the sugar is dissolved.
- Fold the apricot puree into the ice cream base until well combined. Cover and refrigerate for at least 2 hours.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the churned ice cream to an airtight container and freeze for at least 2 hours until firm.
Notes
- The honey is optional, depending on the sweetness of the apricots.
- Make sure to use fresh, ripe apricots for the best flavor.
