Description

A light and flavorful pasta dish featuring fresh asparagus and lemon.


Ingredients

  • 8 oz spaghetti or linguine
  • 1 bunch (8 oz) fresh asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Juice and zest of 1 lemon
  • ½ cup grated fresh Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain, reserving some cooking water.
  2. In a skillet, heat olive oil over medium heat. Add asparagus and sauté for 3–4 minutes until bright green and tender-crisp.
  3. Add minced garlic to the skillet with asparagus and cook for about 1 minute until fragrant.
  4. Combine the drained pasta with the asparagus mixture in the skillet. Stir in lemon juice, zest, and reserved cooking water as needed for creaminess.
  5. Remove from heat and mix in grated Parmesan cheese until melted. Adjust seasoning with salt and pepper.
  6. Serve hot, garnished with extra Parmesan or lemon zest if desired.
