A quick and delicious tomato soup made with fresh ingredients.
Ingredients

- ½ cup reduced sodium vegetable broth
- ¼ cup unsweetened plant milk (I used almond milk)
- 2 (14 oz) cans diced tomatoes (with the juices)
- 1 tablespoon tomato paste
- 1 teaspoon olive oil
- 1 garlic clove
- ½ teaspoon dried oregano
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon sugar
Instructions
- In the base of a Vitamix, combine the broth, milk, diced tomatoes, tomato paste, olive oil, garlic clove, oregano, salt, pepper, and sugar.
- Turn the blender up to high and process for 5-6 minutes, or until the soup has started to steam.
- Turn the blender off and carefully remove the lid. Serve immediately.
Notes
- Feel free to adjust spices to taste.
- For a creamier soup, add more plant milk.
