Description

This delicious avocado egg toast is a perfect blend of flavors and is easy to prepare.


Ingredients

Scale
  • 1 medium avocado
  • 3 hard-boiled eggs
  • 2 Tbsp plain greek yogurt
  • 1 large lemon, juice of half
  • 1 Tbsp dijon mustard
  • ¼ cup fresh parsley, chopped
  • 1 Tbsp fresh dill, chopped
  • 1 shallot, chopped
  • ½ tsp red pepper flakes
  • salt and black pepper, to taste
  • 1 slice sourdough bread

Instructions

  1. Cut avocado in half and remove the pit. Then scoop out the flesh.
  2. Roughly chop the shallot and hard boiled eggs. Then add everything to a cutting board.
  3. Smash all the ingredients using either a masher, fork or a kitchen knife.
  4. Top a piece of toast with the avocado and egg mixture.
  5. Optional: Add crushed red chili flakes or your favorite toppings.

Notes

  • This dish can be served with soft-boiled eggs as an alternative.
