Description

A delicious and creamy chicken gnocchi soup made in a crock pot, perfect for a comforting meal.


Ingredients

  • 2 celery ribs (chopped)
  • 23 large carrots (peeled and chopped)
  • 1/2 medium onion (diced)
  • 1 teaspoon dried parsley
  • 2 teaspoons minced garlic
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large boneless skinless chicken breasts
  • 4 cups low sodium chicken broth
  • 3/4 cup heavy cream
  • 1 tablespoon cornstarch
  • 3 cups potato gnocchi
  • 1 cup fresh spinach (roughly chopped)
  • 1/2 cup grated parmesan cheese

Instructions

  1. To your crock pot, add the boneless skinless chicken breasts.
  2. Add the chopped carrots, celery, and onion.
  3. Sprinkle the seasonings and garlic over top.
  4. Pour in the chicken broth, and cook 3-4 hours on high or 6-8 hours on low.
  5. About an hour before cooking is completed, whisk together the heavy cream and cornstarch, and add to the crock pot.
  6. Also add the gnocchi.
  7. Just before serving, add the spinach and grated parmesan cheese.
  8. Allow about 5 minutes for the cheese to melt and the spinach to soften.
