Description

Ingredients

  • 2 tablespoons olive oil
  • 2 large zucchini
  • 1 red bell pepper
  • 1 cup cherry tomatoes
  • 1 lemon (juiced and zested)
  • 1 tablespoon honey
  • Seasonings: garlic powder, onion powder, dried oregano, salt, and pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine sliced zucchini, chopped red bell pepper, and halved cherry tomatoes with olive oil and seasonings; toss well.
  3. Spread the vegetable mixture on one side of the baking sheet.
  4. Place seasoned salmon fillets on the other side, drizzling them with remaining olive oil.
  5. In a small bowl, whisk together lemon juice, zest, and honey; pour half over the salmon.
