- ¼ cup (60 ml) coconut oil
- ¼ cup (25 g) unsweetened cocoa powder
- ¼ cup (60 ml) sugar-free sweetener (like erythritol or monk fruit)
- 1 tsp vanilla extract
- Pinch of salt
- Optional: ¼ cup unsweetened shredded coconut or chopped nuts
Instructions
- In a saucepan over low heat, melt together peanut butter, coconut oil, cocoa powder, and sweetener until smooth.
- Remove from heat and stir in vanilla extract, salt, and optional coconut or nuts.
- Drop spoonfuls of mixture onto a parchment-lined baking sheet.
- Refrigerate for 30 minutes or until firm.
- Store in an airtight container in the fridge for up to 1 week.
