- 1 cup orzo pasta
- 1 tablespoon olive oil
- 3 cloves garlic minced
- 2 1/2 cups vegetable broth
- 1/2 cup heavy cream
- 2 cups fresh spinach
- 1 lemon juiced and zested
- 1/3 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat and sauté garlic for 30 seconds until fragrant.
- Add 1 cup orzo and toast for 1 minute stirring constantly.
- Pour in 2 1/2 cups vegetable broth, bring to a simmer and cook for 8 to 10 minutes, stirring often until orzo is tender.
- Lower heat and stir in 1/2 cup heavy cream and fresh spinach, allowing spinach to wilt.
- Add lemon juice, lemon zest, Parmesan cheese, salt, and pepper, then stir until creamy and serve warm.

- This dish can be served warm or at room temperature.
