Description

Delicious sugar-free brownies made with almond flour and cocoa powder, perfect for a healthy treat.


Ingredients

  • 3/4 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon xanthan gum
  • 3/4 cup Swerve brown sugar replacement
  • 1/2 cup butter (melted)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup Lily’s sugar-free semi-sweet chocolate chips (plus more for topping)

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8-inch x 8-inch baking pan with parchment paper. Set aside.
  2. In a medium mixing bowl, whisk together the almond flour, cocoa powder, and xanthan gum until no lumps remain. Set aside.
  3. In a large mixing bowl, whisk together the brown sugar replacement and melted butter until smooth. Add the eggs and vanilla and whisk until evenly combined.
  4. Add the dry ingredients to the wet ingredients and whisk until just combined. Add the chocolate chips and fold into the brownie batter with a rubber spatula or wooden spoon.
  5. Transfer the batter to the prepared baking dish. Spread into an even layer and top with more chocolate chips, if desired.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and place on a wire rack to cool completely. Cut into 9 squares and enjoy!
