Description

A delicious and healthy dish featuring chicken breasts cooked with sweet potatoes, honey, and garlic.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped
  • remaining olive oil
  • to taste honey
  • to taste minced garlic
  • to taste soy sauce
  • to taste dried thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine honey, minced garlic, soy sauce, olive oil, paprika, black pepper, salt, and thyme.
  3. In a baking dish, place the sweet potatoes at the bottom.
  4. Arrange the chicken breasts on top of the sweet potatoes.
  5. Pour the honey garlic mixture over the chicken and sweet potatoes.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the sweet potatoes are tender.
  7. Garnish with fresh parsley before serving.

  • Pair with a green salad for a complete meal.
  • Can substitute chicken thighs for chicken breasts if desired.
