- 4 boneless skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 3 tablespoons honey
- 4 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped
- remaining olive oil
- to taste honey
- to taste minced garlic
- to taste soy sauce
- to taste dried thyme
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine honey, minced garlic, soy sauce, olive oil, paprika, black pepper, salt, and thyme.
- In a baking dish, place the sweet potatoes at the bottom.
- Arrange the chicken breasts on top of the sweet potatoes.
- Pour the honey garlic mixture over the chicken and sweet potatoes.
- Bake for 25-30 minutes or until the chicken is cooked through and the sweet potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- Pair with a green salad for a complete meal.
- Can substitute chicken thighs for chicken breasts if desired.
