Delicious mini waffles made with almond flour and hemp protein, perfect for a healthy breakfast or snack.
Ingredients

- 1 cup blanched almond flour
- 1/3 cup hemp protein powder
- 1/4 cup tapioca starch
- 2 Tbsp coconut sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 2 Tbsp avocado oil
- 1 tsp vanilla extract
- 1/2 cup water
Instructions
- Place a wire cooling rack in your oven and preheat your oven to 250 degrees F. Plug in your waffle iron.
- In a medium sized mixing bowl, combine the almond flour, hemp protein powder, tapioca starch, coconut sugar, baking soda and salt.
- Mix in the egg, avocado oil, vanilla and water. Whisk until smooth.
- Let the batter sit for 5 minutes.
- Scoop the batter onto your waffle iron and cook until done.
- When the waffle is done cooking, remove it from the waffle iron and place it in your preheated oven, where it will further crisp up.
- Repeat until no more batter remains.

- This recipe makes about 8 mini waffles.
