Mini Waffles with Almond Flour and Hemp Protein

Description

Delicious mini waffles made with almond flour and hemp protein, perfect for a healthy breakfast or snack.


Ingredients

Scale
  • 1 cup blanched almond flour
  • 1/3 cup hemp protein powder
  • 1/4 cup tapioca starch
  • 2 Tbsp coconut sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 2 Tbsp avocado oil
  • 1 tsp vanilla extract
  • 1/2 cup water

Instructions

  1. Place a wire cooling rack in your oven and preheat your oven to 250 degrees F. Plug in your waffle iron.
  2. In a medium sized mixing bowl, combine the almond flour, hemp protein powder, tapioca starch, coconut sugar, baking soda and salt.
  3. Mix in the egg, avocado oil, vanilla and water. Whisk until smooth.
  4. Let the batter sit for 5 minutes.
  5. Scoop the batter onto your waffle iron and cook until done.
  6. When the waffle is done cooking, remove it from the waffle iron and place it in your preheated oven, where it will further crisp up.
  7. Repeat until no more batter remains.
