Description
Delicious grilled chicken skewers marinated in a tangy lemon and herb dressing, threaded with colorful bell peppers and onions.
Ingredients
Scale
- ¼ cup olive oil
- ¼ cup fresh lemon juice
- 1 ½ tsp sea salt
- 1 ½ tsp dried oregano
- ½ tsp dried rosemary
- ½ tsp ground black pepper
- pinch of cayenne pepper
- 3 large garlic cloves, minced
- 1 lb boneless, skinless chicken breasts cut into bite sized pieces
- 2 green bell peppers, cut into ¾-inch chunks
- 1 red onion, cut into ¾-inch chunks
Instructions
- Add all of the ingredients needed for the marinade to a large zip lock bag. Seal the bag then squish it around to mix the marinade. Add the chicken pieces and squish again to coat the chicken. Seal and let marinate the chicken for at least 30 minutes and up to 6 hours.
- When you’re ready to cook, add oil to a large griddle pan or cast iron skillet with a fitted lid and warm over medium-high heat.
- Thread the chicken pieces, peppers, and onions onto the skewers, alternating between the chicken and vegetables.
- Add the skewers to the heated pan. If needed, do this in 2-3 batches so you don’t overcrowd the pan. Cover and let cook for about 5-7 minutes before turning the skewers over. Cook on all sides until done, around 15 minutes per batch.
- When done, remove the skewers from the heat, let rest for 5 minutes and serve with additional lemon slices if desired.
Notes
- For best flavor, marinate the chicken for a longer time, around 6 hours.
- Use skewers that are pre-soaked in water if using wooden skewers to prevent burning.
