Description

Deliciously marinated chicken thighs baked to perfection with seasoned baby potatoes.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 6 cloves garlic, minced
  • 4 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh lemon juice
  • 2 pounds baby potatoes, halved
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Marinate the chicken by mixing garlic, olive oil, oregano, salt, pepper, red pepper flakes (optional), and lemon juice in a bowl. Coat the chicken thighs well and refrigerate for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, salt, and pepper until evenly coated.
  3. Place marinated chicken thighs skin-side up on a baking sheet with seasoned potatoes around them. Bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F.
  4. Let rest for 5 minutes before serving. Garnish with freshly chopped parsley.
