Description

Ingredients

  • 12 oz fettuccine pasta (dried)
  • 1 cup starchy pasta cooking water (reserved)
  • 6 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (finely grated)
  • 0 tsp salt (start with this amount)
  • 0 tsp black pepper (freshly ground)
  • 1 Fresh parsley (chopped, for garnish)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add the dried fettuccine and cook until al dente, about 9-11 minutes, stirring occasionally to prevent sticking.
  2. Before draining the pasta, scoop out 1 cup of the starchy cooking water and set it aside to adjust the sauce later.
  3. Carefully drain the cooked fettuccine in a colander, but don’t rinse! This helps the sauce cling to the pasta.
  4. In a large skillet over medium heat, melt the unsalted butter. If using, add minced garlic and sauté for about 1 minute until fragrant, but not browned.
  5. Pour in the heavy cream and stir gently. Bring to a gentle simmer, cooking for 2-3 minutes to thicken slightly. Avoid boiling.
  6. Lower the heat and gradually whisk in the finely grated Parmesan cheese until melted and smooth. If it’s too thick, slowly stir in the reserved pasta water until you reach your desired consistency.
  7. Taste the sauce, adding salt and freshly ground black pepper as needed. Remember to start with ½ teaspoon of salt to enhance the flavors.
  8. Add the drained fettuccine to the skillet. Using tongs or a large spoon, toss the noodles in the creamy sauce until evenly coated, about 1-2 minutes.
  9. Immediately plate your fettuccine Alfredo, garnishing with freshly chopped parsley if desired. Enjoy the warm, comforting dish right away!
