Description

Ingredients

  • 1 lb dried black-eyed peas
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 2 bay leaves
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Rinse and soak the black-eyed peas in cold water for at least 6 hours or overnight.
  2. In a large pot, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until softened.
  3. Drain the soaked peas and add them to the pot along with the vegetable broth, bay leaves, and cayenne pepper.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour until tender.
  5. Season with salt and pepper, removing bay leaves before serving.

Notes

  • For best results, use fresh black-eyed peas.
  • You can adjust the spiciness by adding more or less cayenne pepper.
