A hearty and nutritious black-eyed peas stew that’s perfect for any occasion.
Ingredients

- 1 lb dried black-eyed peas
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth (or chicken broth)
- 2 bay leaves
- 1/4 tsp cayenne pepper (adjust to taste)
- Salt and pepper to taste
Instructions
- Rinse and soak the black-eyed peas in cold water for at least 6 hours or overnight.
- In a large pot, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until softened.
- Drain the soaked peas and add them to the pot along with the vegetable broth, bay leaves, and cayenne pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour until tender.
- Season with salt and pepper, removing bay leaves before serving.
Notes
- For best results, use fresh black-eyed peas.
- You can adjust the spiciness by adding more or less cayenne pepper.
- This stew can be served with crusty bread or over rice.
