Ingredients

- 1 cup (200g) cooked black beans
- 1/2 cup (100g) corn kernels
- 1/4 cup (50g) diced bell peppers
- 1/4 cup (50g) diced onions
- 1 teaspoon (5g) chili powder
- 1/2 teaspoon (2g) cumin
- 1/2 teaspoon (2g) garlic powder
- 8 small corn tortillas
- 1 tablespoon (15ml) vegetable oil
Instructions
- In a bowl, mash the black beans slightly and mix with corn, bell peppers, onions, chili powder, cumin, and garlic powder.
- Warm the corn tortillas briefly to make them pliable.
- Place about 2 tablespoons of the filling in the center of each tortilla and roll tightly into a taquito.
- Heat vegetable oil in a skillet over medium heat.
- Cook the taquitos for 2-3 minutes per side until golden and crispy.
- Serve immediately with your favorite vegan toppings like salsa or guacamole.
