Description

A delicious and creamy corn dip perfect for parties and gatherings.


Ingredients

Scale
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayo
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon granulated sugar
  • 15 oz canned whole kernel sweet corn, drained
  • 10 oz Rotel diced tomatoes and green chilies, drained
  • 2 cups shredded Mexican cheese blend
  • 1 cup chopped green onions
  • 1 tablespoon grated yellow onion

Instructions

  1. Dump the softened cream cheese, sour cream and mayo into a large mixing bowl.
  2. Add the salt, pepper, garlic powder, onion powder, smoked paprika and granulated sugar to the bowl.
  3. Use an electric mixer to whip all of the ingredients together until smooth.
  4. Add the corn and Rotel to the bowl.
  5. Stir well.
  6. Add the shredded cheese, chopped green onions and grated yellow onion to the bowl.
  7. Stir well again.
  8. Cover the bowl and place it in the refrigerator for at least 2 hours before serving.
  9. Serve with chips and/or crackers for dipping.
  10. Enjoy!

Notes

  • This dip can be made ahead of time for extra flavor.
  • Adjust spice level by choosing a milder or spicier Rotel.
