Description
A rich and creamy peppermint chocolate mousse that’s perfect for the holidays.
Ingredients

- 6 oz semi-sweet chocolate
- 3/4 cup heavy whipping cream
- 2 egg yolks
- 2 tablespoons granulated sugar
- 1/2 teaspoon peppermint extract
- Pinch of salt
- Optional: additional whipped cream, crushed candy canes, chocolate curls
Instructions
- In a heatproof bowl, melt 6 ounces of semi-sweet chocolate over a double boiler or in 20-second intervals in the microwave, stirring until smooth. Set aside to cool slightly.
- In a saucepan, whisk together 2 egg yolks, 2 tablespoons granulated sugar, and a pinch of salt. Cook over low heat, whisking constantly until slightly thickened and reaches 160°F. Remove from heat.
- Slowly whisk the warm custard into the melted chocolate until fully combined. Stir in 1/2 teaspoon peppermint extract. Let cool to room temperature.
- In a chilled bowl, whip 3/4 cup heavy whipping cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture in batches until smooth.
- Divide mousse into 4 dessert glasses. Chill at least 2 hours or until set.
- Garnish with whipped cream, candy canes, or chocolate curls if desired.
Notes
- Make sure the chocolate cools slightly before mixing it with the custard to prevent curdling.
- For a stronger peppermint flavor, increase the peppermint extract if desired.
