- 2 tablespoons mayonnaise
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon lemon juice
- 4 pita breads
- 1 cup lettuce, shredded
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ½ red onion, thinly sliced
Instructions
- Start by preheating your grill or skillet over medium heat. While it heats up, season the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Cook the Chicken: Place the seasoned chicken on the grill or skillet. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes.
- Make the Herby Ranch Dressing: In a bowl, combine Greek yogurt, mayonnaise, chopped dill, chopped parsley, and lemon juice. Mix well until all ingredients are combined and set aside.
- Slice the Chicken: Once the chicken has rested, slice it into thin strips.
- Assemble the Pitas: Warm the pita breads slightly, then layer with shredded lettuce, sliced cucumbers, halved cherry tomatoes, and red onion.
- Add Chicken: Place the sliced chicken on top of the veggies in each pita.
- Drizzle with Dressing: Generously drizzle the herby ranch dressing over the chicken and veggies.
