Description
A delicious and crunchy Brussels sprouts salad with a creamy Caesar dressing.
Ingredients

- 400 g Brussels sprouts (trimmed and very finely shredded)
- 1 tablespoon grated Parmesan
- ½ lemon zested
- 3 tablespoons mayonnaise
- 1 tablespoon Greek yogurt or sour cream
- 1 small garlic clove (grated)
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 2 teaspoons Worcestershire sauce
- 1 tablespoon finely grated Parmesan
- Black pepper to taste
- Croutons (store bought or cubes of toasted bread)
Instructions
- Shred the trimmed sprouts finely by hand or with a food processor and slicing blade.
- Whisk all the dressing ingredients together. Adjust lemon or parmesan to taste.
- Toss the shredded sprouts with the parmesan and lemon zest.
- Add dressing and gently toss to coat the Brussels sprouts.
- Let the slaw sit for 10–15 minutes before serving to soften the sprouts slightly.
- Serve topped with croutons.
