Description

A delicious and crunchy Brussels sprouts salad with a creamy Caesar dressing.


Ingredients

Scale
  • 400 g Brussels sprouts (trimmed and very finely shredded)
  • 1 tablespoon grated Parmesan
  • ½ lemon zested
  • 3 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt or sour cream
  • 1 small garlic clove (grated)
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon finely grated Parmesan
  • Black pepper to taste
  • Croutons (store bought or cubes of toasted bread)

Instructions

  1. Shred the trimmed sprouts finely by hand or with a food processor and slicing blade.
  2. Whisk all the dressing ingredients together. Adjust lemon or parmesan to taste.
  3. Toss the shredded sprouts with the parmesan and lemon zest.
  4. Add dressing and gently toss to coat the Brussels sprouts.
  5. Let the slaw sit for 10–15 minutes before serving to soften the sprouts slightly.
  6. Serve topped with croutons.
