Brioche Egg Sandwich

Description

A delicious brioche sandwich filled with creamy scrambled eggs, sautéed spinach, and fresh vegetables.


Ingredients

Scale
  • 1 tablespoon butter
  • 2 large eggs
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon coarsely ground black pepper
  • 1 brioche bun
  • 12 slices Fontina cheese (1 ounce)
  • ½ cup fresh spinach
  • 1 small Roma tomato
  • ½ medium avocado (mashed with a fork)

Instructions

  1. Melt the butter in a small skillet over medium heat.
  2. While the butter melts, beat the eggs with the salt and black pepper in a small bowl.
  3. Pour the eggs into the skillet and cook, stirring constantly and scraping the bottom of the pan, until just set. Transfer the eggs to a bowl.
  4. Toast the brioche bun in a 350°F (177°C) oven or toaster oven until lightly golden.
  5. Place the cheese on one half of the bun. Top with the eggs, spinach, and tomato slices.
  6. Spread the mashed avocado on the other half of the bun.
  7. Close the sandwich, cut in half, and serve warm.

  • Feel free to add other vegetables like bell peppers or onions for extra flavor.
