Description
A rich and decadent chocolate cobbler topped with a cake-like layer and a warm pudding sauce underneath.

- 1 cup Bisquick baking mix
- 3 tablespoons cocoa powder
- 2/3 cup granulated sugar
- 1/4 cup butter (melted)
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup chocolate chips (semisweet)
- 2/3 cup granulated sugar
- 1/3 cup brown sugar (lightly packed)
- 2 tablespoons cocoa powder
- 1 1/4 cups very hot water
Instructions
- Preheat oven to 350F and grease a deep dish pie plate (or an 8×8″ baking dish). Set aside.
- In a medium mixing bowl, whisk together Bisquick baking mix, cocoa powder, and sugar.
- Add melted butter, vanilla extract, and milk, stirring until combined.
- Spread batter into prepared baking dish, then sprinkle chocolate chips over the top.
- In a small mixing bowl, prepare the topping by whisking together the sugar, brown sugar, and cocoa powder. Sprinkle this mixture evenly over the top of the batter and chocolate chips in the baking dish.
- Pour very hot water over the top of everything in the baking dish. Do not stir!
- Transfer dish to oven and bake for about 35-40 minutes. The center of the cobbler should be jiggly, but the top layer will be cake-like with a jiggly pudding-like sauce underneath.
- Remove from oven and let cool for about 10-15 minutes to allow the sauce to thicken a bit as it cools. Serve warm, topping with vanilla ice cream if desired.
