A delicious and easy enchilada casserole that layers meat, tortillas, and cheese.

- 1 lb ground beef
- 1 cup onion (diced)
- 2 cloves garlic (minced)
- 2 cups enchilada sauce (red)
- 10 corn tortillas (halved)
- 2 cups shredded cheese
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cook onion and garlic in oil, then brown ground beef. Drain excess fat.
- Season beef and stir in a portion of enchilada sauce.
- Layer sauce, tortillas, beef, and cheese in the baking dish.
- Repeat layers, finishing with cheese on top.
- Bake uncovered for 25–30 minutes until bubbly.
- Rest 10 minutes before serving.
Notes
- This casserole can be made ahead of time and reheated.
