Description
Delicious BBQ chicken stuffed zucchini boats topped with melted cheddar cheese.

- 4 medium zucchini
- 1 pound extra lean ground chicken
- 1 tablespoon extra virgin olive oil
- 1/2 cup bbq sauce (I used honey bbq)
- 1 tablespoon dried chives
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375 degrees F.
- Heat the oil in a medium nonstick skillet over medium-high heat; then add the ground chicken and break apart with a meat chopper.
- Brown for approximately 4-6 minutes until the meat is no longer pink; then add the bbq sauce and chives. Mix well; then remove the pan from the heat.
- Wash the outer skin of the zucchini under warm water with a vegetable brush; then pat dry. Cut off the top and bottom ends of the zucchini; then cut down the middle and then again cut each piece in half lengthwise. You’ll wind up with 8 pieces.
- Using a kitchen spoon, carefully scoop out the inside flesh of the zucchini leaving a 1/2-inch border on both sides; repeat for all pieces. Place the zucchini boats on a sheet pan or in a baking dish.
- Next, add some of the ground chicken mixture to each zucchini boat; then top with the shredded cheese; repeat for all pieces.
- Place the sheet pan in the oven and bake for 15-20 minutes until the cheese has melted.

- Feel free to customize the toppings with other cheeses or additional spices.
