Description

Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • Oil for frying (vegetable or avocado oil)
  • ½ cup mayonnaise (for the Bang Bang Sauce)
  • 2 tbsp sweet chili sauce
  • 1 tbsp hot sauce (like sriracha)
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • Pinch of salt
  • Optional Garnish: chopped green onions
  • Optional Garnish: toasted sesame seeds

Instructions

  1. Marinate the Chicken: Place your bite-sized chicken pieces in a bowl with the buttermilk. Let them marinate for at least 30 minutes (or up to overnight in the fridge). This helps tenderize the chicken and gives it great flavor.
  2. Prepare the Coating: In a large bowl, mix together the flour, cornstarch, garlic powder, onion powder, salt, and black pepper. This dry mix will help give the chicken its signature crunch.
  3. Heat the Oil: Heat oil in a deep skillet or heavy-bottomed pot over medium-high heat. You’ll want about 2 inches of oil in the pan. Test it by dropping in a bit of flour—if it sizzles immediately, you’re good to go.
  4. Dredge and Fry: Take the marinated chicken pieces out of the buttermilk, shake off excess, and toss them in the dry flour mixture until well coated. Fry in small batches to avoid overcrowding. Cook each piece for about 4–5 minutes or until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
  5. Make the Bang Bang Sauce: While the chicken rests, whisk together the mayonnaise, sweet chili sauce, hot sauce, honey, rice vinegar, and a pinch of salt in a bowl. Taste and adjust the heat or sweetness to your liking.
  6. Toss or Drizzle: You can either toss the chicken pieces in the sauce to coat them fully or drizzle the sauce over the crispy chicken. Garnish with chopped green onions and sesame seeds if desired.
